As a contrast: vegan. VT offers a variety of vegan dishes, from bowls, falafel, burgers, and pizza. The meat substitutes mainly come from BeyondMeet products. Since I wasn’t in the mood for that, I ordered the vegan Pizza Mediterrano. Vegan also means no animal dairy products, and therefore no cheese. They seem to be using a specially developed substitute here. The dough was sourdough, probably even gluten-free. So, how should I rate this? The dough was a bit too thick and probably hadn’t been fermented long enough, or perhaps not airy enough around the edges due to the lack of gluten. The cheese simply doesn’t pull together and has a rather gritty consistency. For a vegan pizza, this is probably a good result, but for a truly good pizza, it’s rather below average (and I remember why I’m not a vegetarian/vegan).
